Cucumber is one of my favourite foods and its seasonal in November. Its cooling thermal nature and has many benefits, such as quenching thirst, relieving burns (when applied topically) and treating inflammatory/heat conditions. Pickled cucumber benefits the digestion. Miso pickled cucumber is one of my favourite pickles of all time. Place a layer of miso in a ceramic or glass container, place several layers of thinly sliced cucumber (leave the skin on) on top and cover with another layer of miso. Cover and refrigerate for at lease 2 hours before serving. You can wash off the miso, but as I used beautiful organic miso, I can’t bear to wash it off. Avoid cucumber is you have a yang deficiency or if you have watery mucous or diarrhoea.
